Entrecôte Carpaccio
Shaved rib eye rolled with a filling of caramelized shallots, fresh arugula, aged Gouda, and rosemary-Dijon aioli

Gougère – Walnut Blue Cheese
Choux dough puff filled with a light blue cheese mousse

Poached oyster baked with spinach and Mornay sauce, served on the half shell
